Strawberry puree
1 1/2 cup frozen strawberries
1 cup sugar
1/4 cup water
Cocktail Recipe
1 cup coconut milk
3 Tbsp sugar
Juice of 1 lime
3 oz rum
1/2 cup pineapple juice
1 1/2 cups strawberry puree
Ice
themethod
- Prepare the strawberry puree. Place ingredients in pan over medium heat and cook until warmed through. Allow too cool.
- Place the strawberries in a blender and puree. Set aside and keep chilled until ready to use.
- Pour coconut milk, rum, sugar, lime juice and pineapple juice into a blender.
- Add ice.
- Blitz until frozen and slushy.
- Divide Puree between 4 glasses.
- Top with Pina colada.
- Garnish with pineapple leaves, pineapple or strawberries and enjoy!
