I make a mean margarita - I mean it is so mean, I drink several....but I don’t get mean when I drink them....I just dance more.


Simple Syrup

1 cup  (250ml) water

1 cup sugar

Margarita Rim

1 Tbsp white sugar

1 tsp Hawaiian Pink Salt

1 Tbsp Lime Zest

1 Tbsp desiccated coconut,

zest of 1/2 a lime

1 lime wedge


1 egg white

1 oz freshly squeezed lime juice

1/2 oz simple syrup

1/2 oz orange liqueur

1.5  oz Tequila

1/2 cup ice

1 lime wedge


  1. Place sugar, salt, lime zest and coconut onto a small plate and mix together.
  2. Using the lime wedge to wet the rim of your glass, turn glass upside town and press and twist into the dry rim mixture, coating the edges of the glass thoroughly.
  3. Separate egg white and place it into a sealable jar. Dry shake the egg white for 30 seconds.
  4. Add lime juice and simple syrup to the shaken egg white.
  5. Add lime juice, orange liqueur, tequila, ice and shake.
  6. Pour cocktail and ice into the rimmed glass and enjoy!
