Endive Bites with Candied Nuts

Food you can carry around in your hand, make in advance and impress people with - that is the kind of food you want to make for a party. So prepare to be the "talk of the town" with these delicious boats of flavour!

Yield: 16 Endive Boats

 

1 Tbsp Butter

1/4 cup Brown sugar

1 cup Chopped walnuts

16 Belgian Endives, cleaned

1 1/2 shallots, diced

2 Tbsp (30ml) red vinegar

1 egg yolk

1/4 cup (60ml) Honey

salt to taste

Pepper to taste

1/2 cup (125 ml) Olive oil

2 Tbsp chives

1 Pear, diced

4 Tbsp (60 ml) Blue cheese/ Stilton

Optional garnish – pomegranate seeds

  1. Make the candied walnuts
  2. Place butter in a skillet and brown butter, as it melts and comes together, add the walnuts and allow them to toast over medium high heat for 3-5 minutes.  Pour onto a cookie sheet lined in parchment to cool.
  3. Prepare your vinaigrette.
  4. Dice the shallot and add to a bowl.
  5. Add red wine vinegar, egg yolk, honey and season to taste.
  6. Emulsify with oil.
  7. Add chopped chives.
  8. Crumble blue cheese into endive boats.
  9. Add diced pear and candied walnuts.
  10. Drizzle with salad dressing just before serving and enjoy!
