Endive Bites with Candied Nuts
Food you can carry around in your hand, make in advance and impress people with - that is the kind of food you want to make for a party. So prepare to be the "talk of the town" with these delicious boats of flavour!

Yield: 16 Endive Boats
1 Tbsp Butter
1/4 cup Brown sugar
1 cup Chopped walnuts
16 Belgian Endives, cleaned
1 1/2 shallots, diced
2 Tbsp (30ml) red vinegar
1 egg yolk
1/4 cup (60ml) Honey
salt to taste
Pepper to taste
1/2 cup (125 ml) Olive oil
2 Tbsp chives
1 Pear, diced
4 Tbsp (60 ml) Blue cheese/ Stilton
Optional garnish – pomegranate seeds
themethod
- Make the candied walnuts
- Place butter in a skillet and brown butter, as it melts and comes together, add the walnuts and allow them to toast over medium high heat for 3-5 minutes. Pour onto a cookie sheet lined in parchment to cool.
- Prepare your vinaigrette.
- Dice the shallot and add to a bowl.
- Add red wine vinegar, egg yolk, honey and season to taste.
- Emulsify with oil.
- Add chopped chives.
- Crumble blue cheese into endive boats.
- Add diced pear and candied walnuts.
- Drizzle with salad dressing just before serving and enjoy!
