Blackberry Iced Tea – Iced Tea
When it's hot out, there is nothing like it. Fresh fruit, sugar, and mint- YUM! Serve it icy cold and dive in!

1 pint Blackberries
1 cup Sugar
2 1/2 cups (625ml) Water
1 Tbsp Mint
4 cups (1 Litre) cold brewed tea
1/4 cup (60ml) Lemon simple Syrup (see below)
Juice of 1/2 Lemon
Mint & Blackberries to garnish
Lemon simple syrup
Makes 1 cup
Peel from 1 lemon
1 cup Sugar
1 cup (250ml) water

- Make the lemon simple Syrup. Place water and sugar and lemon peels into heavy bottomed pan. Bring to a boil and stir until sugar is fully dissolved. Remove from heat. Remove lemon peels and allow to cool. This can be stored in the refrigerator for several weeks.
- Place fresh blackberries, mint sugar and simple syrup into pitcher or bowl and macerate with a muddler or wooden spoon (blackberries may stain!). Add cold brewed tea. Stir and leave to steep for 5 minutes. Add cold water and stir again.
- Add lemon juice.
- Place crushed ice in a frosted glasses, pour and serve with fresh blackberries and mint as garnish.
