Baked Creole Oyster and Crab Gratin
Rustic, buttery, creamy and delicious this is a fast a tasty treat that is great to share. If you have never been introduced to oysters before - welcome - this is your chance to fall in love!

theingredients
6 fresh oysters
1/4 cup Crab meat
CREOLE BUTTER
1/2 cup of room temperature unsalted butter
Pinch of salt
1 tsp smoked paprika
1/2 tsp cayenne (less is you want less spicy, more if you want more heat)
1/2 tsp cumin
1 tsp chilli powder
1 garlic clove, grated
2 Tbsp lemon zest
1 egg beaten, added one half at a time.
3 Tbsp cilantro, chopped
CRUST
1/4 cup panko
1/3 cup parm
1 garlic clove, grated
1 Tbsp lemon zest
Salt and pepper to season
2 Tbsp parsley, chopped
2 Tbsp olive oil
themethod
- Preheat the oven to broil
- Shuck the oysters.
- Make the cajun butter by combining the butter with the salt, paprika, cumin, cayenne, chilli powder, garlic and lemon zest. Mix well.
- Add half of the egg – not the whole thing. Mix until well combined. Add cilantro and mix.
- Place the oysters in a baking dish.
- Top with crab meat.
- Place dollops of butter on top of the crab and oysters.
- Place the baking dish in a ovenproof pan or bake tray making it easier to grab from the oven when it is done. Bake for 2 minutes.
- Add crumb and place back under the broiler for 1-2 minutes.
- Remove when golden and toasted.
